Description

Thibaud Boudignon Anjou à Françoise is a dry Chenin Blanc from old vines on schist, the estate's serious Anjou Blanc bottling.

Anjou Blanc has spent decades in the shadow of the Loire's named crus, and growers such as Thibaud Boudignon have done much to change that by treating it as a wine of origin rather than a volume appellation. Boudignon works small parcels around Savennières on dark schist and sandstone, farmed organically and largely by hand, with horse and plough on the steeper ground and severe crop reduction. Fruit for this cuvée comes from older plantings and is picked in successive passes. It is pressed in whole bunches, fermented with indigenous yeasts and raised in barrel on fine lees for a long élevage without malolactic dominance, then bottled dry so the schist character carries through.

A rich but firmly dry Chenin for lobster, roast veal or aged Comté, and worth decanting; serve at around 12 degrees.
