Tokaji Oremus Aszú 3 Puttonyos is a botrytised sweet wine from Tolcsva, in the Hungarian region that has been classifying its vineyards since 1700.
Tokaj produced the world's first deliberately botrytised sweet wines, served at the courts of Europe long before Sauternes had a name. The Oremus estate takes its name from the vineyard where the aszú method is traditionally said to have been recorded for the first time, in the 1630s, and since 1993 it has belonged to the Álvarez family, owners of Vega Sicilia in Ribera del Duero, who rebuilt the vineyards and the tunnel cellars cut into the volcanic rock. Aszú is made by hand picking individual shrivelled berries, macerating them in base wine, then pressing and ageing the result in Hungarian oak. The puttonyos figure records the sweetness level.
Serve chilled in small glasses alongside blue cheese, pâté or a fruit dessert.
