Description
Tornatore Zottorinotto Etna Bianco is a Carricante white from a single named site on the northern slope of Mount Etna.
Carricante is Etna's great white grape, a late-ripening, high-acid variety grown on the volcano's terraces for centuries and capable of ageing far longer than most Sicilian whites. Zottorinotto is a contrada in the commune of Castiglione di Sicilia, on the northern flank of the mountain, where the Tornatore family farms vineyards on black volcanic sand and fractured lava. Altitude does the work here: the vines sit high on the slope, where cold nights and a long, slow ripening season preserve natural acidity in spite of the southern latitude. Fermentation is in stainless steel, with the emphasis left firmly on the site rather than on anything the cellar might add.
Serve at around 10 degrees with grilled fish, shellfish, salted almonds or a simple risotto. Good Etna Bianco is worth keeping for several years.
