Toro Albalá Amontillado Selección Marqués de Poley is a vintage-dated museum release from the 1954 harvest, in a 200ml bottle.
Toro Albalá works from Aguilar de la Frontera in Montilla-Moriles, the Andalucían region south of Córdoba where Pedro Ximénez, not Palomino, is the dominant grape and where the heat is such that the wines reach full ripeness without chaptalisation. The museum releases are the estate's vintage-dated bottlings, held back in the family cellars for decades rather than run through a solera, so each one carries the mark of a single harvest. The Selección wines were vinified by the second generation and by Antonio Sánchez Romero, the third-generation head of the estate, while the older Convento Selección lots represent the finest and rarest selections in the inventory. This amontillado spent its first years developing under a veil of flor before the veil was allowed to fall and the wine continued oxidatively in cask, which is what gives the style its combination of dry, saline attack and deep, nutty concentration. Decades in wood have left it very intense and highly savoury, quite unlike the younger blended examples.
A small serve is plenty, and an opened bottle will keep for months if stored cool; serve at 13–14°C as an intense aperitif with almonds, aged Manchego or jamón.
