Toro Albala Amontillado Viejismo Solera is drawn from a Montilla-Moriles solera laid down in 1922 and reaches 21 per cent alcohol without fortification.
Montilla-Moriles lies inland from Jerez in the province of Córdoba, and its wines are made and aged in the same way as sherry, through a solera of stacked casks in which older wine is progressively refreshed by younger. The difference here is the grape: where Jerez uses Palomino for its dry styles, Montilla works with Pedro Ximénez, and the intense summer heat ripens it so far that the base wine reaches high alcohol on its own. Like all of Toro Albalá's wines this is 100 per cent Pedro Ximénez, drawn from a solera begun in 1922. The average age of the wine at bottling is 35 years, five more than VORS requires in Jerez, and at 21 per cent alcohol it has not been fortified at all: the sugar levels at picking and the natural evaporation of a long oxidative ageing account for the strength. It is salty and nutty in its intensity, but finely textured with it.
Ready to drink and stable for months once opened. Serve lightly chilled at around 12-14°C with jamón, almonds, aged Manchego or a clear consommé.
