Toro Albala Cream 500ml NV

Toro Albalá Cream is a ten-year-old Oloroso Viejo from Montilla-Moriles, sweetened with old Don PX and a touch of Fino Lagar.

Montilla-Moriles lies inland in Córdoba province, south of Jerez, and works almost entirely with Pedro Ximénez rather than Palomino. The heat here ripens the grapes to such high sugar that many of its wines reach their alcohol naturally, without fortification. Toro Albalá has been based at Aguilar de la Frontera since 1922, in a former power station, and holds unusually deep stocks of old soleras. Cream as a category has an old-fashioned reputation, but this version is built on an intricate ten-year-old Oloroso Viejo, aged oxidatively in cask, then judiciously enriched with aged Don PX for sweetness and a small proportion of Fino Lagar for lift. The result is refined and complex rather than cloying, and does not tire the palate.

Stable for years unopened and good for several weeks once opened; serve at 12-14C with blue cheese, walnuts or a simple almond dessert.
