Toro Albala Don PX 375ml 1994

Toro Albalá Don PX is a single-vintage Pedro Ximénez from Montilla-Moriles, held in cask for decades before release.

Montilla-Moriles lies inland from Jerez in the province of Córdoba, and its hot albariza slopes are where most of the Pedro Ximénez used across southern Spain is grown. The grapes are sun-dried on esparto mats until they shrivel, which concentrates the sugar to extraordinary levels before fermentation is arrested with grape spirit. Toro Albalá sets aside select lots of its best vintage wines for this label rather than blending them into a solera. The barrels are filled, sealed and then left for decades in their single-vintage state, so the wine develops through slow, controlled exposure to oxygen instead of through fractional blending. That long oxidative rest is what brings the nutty, iodine-tinged rancio character and the savoury edge that offsets the sweetness.

Effectively immortal once made, and it keeps well in the fridge for weeks after opening. Serve at 12-14°C in small measures with blue cheese, walnuts, or simply poured over vanilla ice cream.
