Toro Albalá Don PX 375ml 2002

Toro Albalá Don PX is a single-vintage Pedro Ximénez from Montilla-Moriles, released only after at least twenty years in barrel.

Montilla-Moriles lies inland from Jerez in Andalucía, and its hot summers ripen Pedro Ximénez to the point where the grapes can be sun-dried into raisins before pressing, giving a sweet wine of extraordinary density. Toro Albalá reserves select lots of its best vintage wines for late release, filling and sealing barrels that are then left for decades in their single-vintage state rather than being refreshed through a solera. Over that long, slow maturation, controlled exposure to oxygen drives the rancio transformation, adding a nutty, iodine-like savour that cuts across the fruit-cake sweetness and lends the wine a surprising sense of freshness. As the liquid concentrates, the colour darkens towards black and the texture thickens. Vintages are released only when they have reached those classic markers of aged PX, and this is bottled in half-bottle format, which suits a wine poured in small measures.

Ready now and effectively indestructible once opened, it goes with blue cheese, dark chocolate desserts or simply poured over vanilla ice cream. Serve lightly chilled at 8-10°C.
