Toro Albala Don PX is a naturally sweet fortified wine from Montilla-Moriles, made from Pedro Ximénez grapes dried in the sun on straw mats.
Montilla-Moriles lies inland from Jerez in the province of Córdoba, where albariza soils and much hotter summers allow Pedro Ximénez to reach sugar levels the coastal vineyards never manage. Toro Albalá has worked from the town of Aguilar de la Frontera since 1922 and holds one of the deepest reserves of old vintage-dated wine in Andalucía. Don PX is drawn from the youngest of those sweet vintage wines. The hand-harvested fruit is laid out under the sun for up to two weeks so the sugars concentrate, then pressed and fermented until the balance of sugar, alcohol and acidity is right, at which point the fermenting must is stopped with aguardiente, the clear local grape spirit. The wine then settles naturally in stainless steel and in the cone-shaped tinajas traditional to the region; its richness makes filtration impossible, so it is bottled straight from the holding vessel at 17% alcohol.
It is ready to drink and will hold for months in the fridge once opened. Serve at 8-10°C with blue cheese, dark chocolate desserts or simply poured over vanilla ice cream.
