Toro Albala Don PX 375ml 2019

Don PX is Toro Albalá's vintage-dated sweet Pedro Ximénez from Montilla-Moriles, made from grapes raisined in the sun, and this is a 375ml half-bottle.

Montilla-Moriles lies inland from Córdoba in Andalucía, a hotter, drier zone than Jerez, and it is the traditional source of Spain's finest Pedro Ximénez; the bodega draws its fruit mainly from Aguilar, Montalbán and Moriles Alto. Toro Albalá was established in 1922, when José María Toro Albalá took over the disused electricity substation at Aguilar de la Frontera; its underground tunnels still serve as the cellar, and the name Eléctrico survives on some of the labels. Antonio Sánchez, a chemist and oenologist and the founder's nephew, has owned the business since the 1960s, with the day-to-day running now in the hands of his son-in-law. For the vintage Don PX the grapes are laid out on mats to raisin in the sun for fifteen to twenty days after picking; the resulting must is so concentrated that fermentation barely begins, and it is fortified with rectified alcohol before ageing in old American oak.

Serve in a small glass at 8-10°C. It works with dark chocolate desserts, aged blue cheese, or simply poured over vanilla ice cream.
