Toro Albalá Don PX 375ml 2020

Toro Albalá Don PX is a sweet fortified Pedro Ximénez from Montilla-Moriles, bottled young and unaged.

Montilla-Moriles lies inland from Córdoba, where the heat and the chalky albariza soils allow Pedro Ximénez to reach very high sugars. The Don PX wines are Toro Albalá's youngest sweet vintage bottlings. Hand-harvested grapes are laid out on straw mats and left to dehydrate in the sun for about a week. They are then pressed, and when the balance of sugar, alcohol and acidity is right the fermenting must is stunned with aguardiente, the local clear grape brandy, to halt fermentation. The fortified wine is settled in stainless steel and in the large cone-shaped earthenware vessels known as tinajas, and because it is too rich to filter cleanly it is bottled straight from those vessels once it has fallen bright naturally. Neither barrel-aged nor blended, it shows the variety before any rancio character develops. It is 17% alcohol in a 375ml bottle.

Serve it at 8–10°C in small glasses with chocolate desserts, fig tarts or salty blue cheese; an opened bottle keeps in the fridge for months.
