Description
Don PX is the youngest of Toro Albalá's sweet vintage wines, bottled unaged to show Pedro Ximénez before rancio character sets in.
Montilla-Moriles, inland from Jerez in the province of Córdoba, ripens Pedro Ximénez further than anywhere else in Spain, which is why it supplies so much of Andalucía's sweet wine. The hand-picked grapes are laid on straw mats and left to dehydrate in the sun for about seven days, concentrating the sugars. They are then pressed, and once the balance of sugar, alcohol and acidity is right in the tank, the fermentation is stopped with aguardiente, the clear local grape spirit. The fortified wine is settled in stainless steel and in the large cone-shaped clay vessels known locally as tinajas, and because its richness rules out filtration it is bottled straight from those holding vessels. Neither barrel-aged nor blended, it is a pure, grapey expression of the variety, with concentrated fig, honey and muscatel raisin and a bright acidity that carries the sugar.
Ready now and effectively indestructible once opened, which makes it useful by the glass; serve at 10-12°C with chocolate desserts, fig tart or a salty blue cheese.
