Description

Toro Albalá Don PX is a sweet Pedro Ximénez from Montilla-Moriles, made from hand-harvested fruit sun-dried on straw mats before pressing.

Montilla-Moriles lies inland from Jerez in the province of Córdoba, and its hot, dry climate lets Pedro Ximénez reach sugar levels that Jerez itself has to buy in from here. Toro Albalá, based at Aguilar de la Frontera, is the reference name for the variety and was the first producer to commercialise a bottled dessert-style PX, in 1970. The fruit is picked entirely by hand from old bush vines on chalky albariza soils and laid out on esparto mats to raisin in the sun, concentrating sugar before a slow, difficult pressing. The house style favours balance over sheer weight: for all the density there is a racy acid line and a savoury, almost vegetal edge on the finish that stops the wine cloying. It is bottled at 17 per cent alcohol in a half-bottle, which is the sensible measure for a wine of this concentration.

Drink on release or keep for decades; an open bottle lasts weeks in the fridge. Serve at 8-10°C or at room temperature with chocolate desserts, blue cheese or fresh figs.
