Toro Albala Don PX Convento Seleccion 1931

Toro Albalá Don PX Convento Selección is a vintage-dated Pedro Ximénez from Montilla-Moriles, drawn from the oldest and rarest lots in the bodega.

Montilla-Moriles lies south of Córdoba in Andalucía, inland from Jerez, and its chalky albariza soils and hot summers make it the traditional home of Pedro Ximénez. The grapes are sun-dried on mats before pressing, which concentrates the sugars enormously, and the must is fortified and then aged for decades in cask. Toro Albalá works from a converted power station at Aguilar de la Frontera. Its museum wines are vintage-dated rather than solera-blended, and the Convento Selección label is reserved for the finest, oldest and rarest lots in the house, vinified by the first two generations of the family. Wines of this age are enormously concentrated and, importantly, far more savoury than the younger blended PX most drinkers know. Small measures are all that is needed, and an opened bottle will keep for months, or longer at cellar temperature.

Ready now and effectively immortal in bottle. Serve small glasses at 12 to 14°C with dark chocolate, a coffee dessert, or on its own at the end of a meal.
