Toro Albalá Don PX Convento Selección 1974

Toro Albalá Don PX Convento Selección is a vintage-dated sweet Pedro Ximénez from the 1974 harvest, drawn from the oldest and rarest lots in the estate's inventory.

Toro Albalá works from Aguilar de la Frontera in Montilla-Moriles, the Andalucían region south of Córdoba where Pedro Ximénez, not Palomino, is the dominant grape and where the heat is such that the wines reach full ripeness without chaptalisation. Within the museum programme the Convento Selección bottlings sit at the top: produced by the first two generations of the family, they represent the finest, oldest and rarest selections held in the cellars. The grapes are sun-dried to raisins before pressing, so the must starts at an extreme sugar concentration, and the wine is fortified and then left in cask at Aguilar de la Frontera for decades. Evaporation over that time takes a heavy toll on volume and leaves behind something intensely concentrated. What separates these old bottlings from the younger blended PX is not sweetness but savour: the sugar is still there, but it sits under layers of dried fruit, roasted and balsamic character.

Small serves only, and the bottle will keep for months, even years, once opened if stored cool; serve at 10–12°C with dark chocolate, coffee puddings or blue cheese.
