Toro Albala Don PX DB Selección Luxury is a vintage-dated Pedro Ximénez from a single year, aged for decades in cask at Aguilar de la Frontera.

Montilla-Moriles lies inland from Córdoba, hotter and drier than Jerez, and Pedro Ximénez ripens so completely there that the grapes are sun-dried on mats before pressing. The resulting must is thick enough that fermentation barely begins, and the wines reach their final strength with little or no fortification. Toro Albalá has worked from Aguilar de la Frontera since 1922, and its museum releases are vintage-dated bottlings rather than solera blends, drawn from casks that have sat in the cellars for decades while evaporation concentrated them further. The Selección wines sit in the middle of the museum range, vinified by the second generation of the family and by Antonio Sánchez Romero, the third generation and current head of the estate, while the Convento Selección label is reserved for the oldest and rarest lots. With this much time in wood the wine turns almost black, and its sweetness is carried by a savoury, resinous intensity rather than simple sugar.

A small glass goes a long way, and the bottle will keep for months once opened if stored cool. Serve at 12-14°C with dark chocolate, coffee desserts or a mature blue cheese.
