Toro Albala Don PX Gran Reserva 375ml 1987

Toro Albalá Don PX Gran Reserva is a single-vintage Pedro Ximénez released only after at least 25 years in barrel.

Montilla-Moriles, inland from Córdoba, grows Pedro Ximénez and traditionally sun-dries the bunches on esparto mats before pressing, concentrating the sugars to extraordinary levels. Toro Albalá, based since 1922 in a former power station at Aguilar de la Frontera, sets aside select lots of its best vintages for later release under the Gran Reserva label. Rather than being run through a solera, these barrels are filled, sealed and left for decades in their single-vintage state. Slow, controlled exposure to oxygen brings on the rancio transformation, adding a nutty, iodine-tinged savour that cuts across the sweet, fruit-cake concentration and lends freshness. As the wine concentrates the colour darkens almost to black and the texture thickens. Vintages are released only once they show these hallmarks of aged PX.

Ready to drink and stable for months once opened; serve at 12-14C in small measures with dark chocolate, Roquefort or poured over vanilla ice cream.
