Description
Don PX Gran Reserva is a single-vintage Pedro Ximénez from Montilla-Moriles, bottled after more than three decades in cask.
Montilla-Moriles lies inland from Jerez in the province of Córdoba, and its hot albariza soils ripen Pedro Ximénez to sugar levels no other region matches, which is why so much of the sweet wine sold across Andalucía originates here. Toro Albalá sets aside select lots of its best vintage wines for release under the Gran Reserva label. The grapes are sun-dried before pressing, the fermentation is arrested with grape spirit while the must is still intensely sweet, and the wine is then filled into oak barrels and sealed, each barrel left in its single-vintage state for decades rather than being refreshed through a solera. Controlled exposure to oxygen over that time drives the transformation: colour darkens, texture thickens, acidity rises and nutty, iodine, rancio notes build over the raisin and fruitcake sweetness.
Fully mature and needing no cellaring, it keeps almost indefinitely once opened; serve at 12-14°C in small glasses with dark chocolate, blue cheese or vanilla ice cream.
