Toro Albalá Don PX Selección 1984

Toro Albalá Don PX Selección is a vintage-dated sweet Pedro Ximénez from the 1984 harvest, held in cask in the family cellars since then.

Toro Albalá works from Aguilar de la Frontera in Montilla-Moriles, the Andalucían region south of Córdoba where Pedro Ximénez, not Palomino, is the dominant grape and where the heat is such that the wines reach full ripeness without chaptalisation. The Selección wines were vinified by the second generation of the family and by Antonio Sánchez Romero, the third-generation head of the estate. As with all the Don PX bottlings, the grapes are laid out to dry in the sun until they raisin, concentrating the sugars to the point where fermentation is minimal and the wine is fortified early. It then sits in cask at Aguilar de la Frontera for decades, losing volume steadily to evaporation. The result is a wine of considerable density that has traded some of the primary sweetness of a young PX for a more savoury, layered and complex character. Only small quantities of each vintage-dated release are made available.

A little goes a long way, and an opened bottle will keep for months if stored at cellar temperature; serve at 10–12°C with chocolate desserts, coffee or a hard sheep's cheese.
