Toro Albala Don PX Seleccion Luxury 200ml 1965

Toro Albala Don PX Seleccion Luxury is a vintage Pedro Ximénez from Montilla-Moriles, bottled from a small museum reserve held back for decades in cask.

The Montilla-Moriles DO, inland from Córdoba, is Pedro Ximénez country: summers are fierce, the best soils are the same chalky albariza found in Jerez, and the grapes are raisined in the sun before pressing. The resulting must is so sweet it will hardly ferment, which is why these wines are naturally rich rather than merely sweetened. Toro Albalá has its cellars at Aguilar de la Frontera and is known above all for its library of vintage-dated PX. The museum releases represent the most concentrated expressions in that library, the Selección bottlings having been vinified by the second generation and by Antonio Sánchez Romero, third generation and current head of the estate. Extended cask ageing concentrates the wine further and builds the savoury, almost salty edge that distinguishes a very old PX from a young one.

Serve in small measures at 8–10°C; an opened bottle holds for months if kept cool. Good with dark chocolate, coffee-based desserts or Roquefort.
