Toro Albala Don PX Seleccion Luxury 200ml 1968

Toro Albala Don PX Seleccion Luxury is a single-vintage Pedro Ximénez from the Montilla-Moriles cellars of Toro Albalá, released decades after it was made.

Montilla-Moriles sits south of Córdoba, a hot inland zone whose chalky albariza soils and long summers ripen Pedro Ximénez to extraordinary sugars. Bunches are sun-dried on mats until they raisin, then pressed for a must so dense that fermentation stops almost as soon as it starts. Toro Albalá, based at Aguilar de la Frontera, keeps an unusually deep reserve of vintage-dated PX, and the museum releases are the most concentrated wines it holds. The Selección label covers bottlings vinified by the second generation and by Antonio Sánchez Romero, the third-generation head of the house; Convento Selección is reserved for the oldest and rarest lots, and the Ginés Liébana label for older parcels purchased and raised by the estate. Very long ageing in cask leaves the wine opaque and syrupy, and builds the markedly savoury character that separates old PX from the simpler blended wines sold young.

Pour a small measure and expect an opened bottle to last months, even years, in a cool cellar. Serve at 8–10°C with chocolate, coffee or a mature blue cheese.
