Toro Albalá Don PX Selección Luxury 200ml 1980

Toro Albalá Don PX Selección Luxury is a vintage-dated Pedro Ximénez from Montilla-Moriles, drawn from the estate's museum stocks of very old sweet wine.

Montilla-Moriles lies inland from Córdoba in Andalucía, where heat and albariza soils push Pedro Ximénez to sugar levels Jerez rarely sees. The grapes are laid out to raisin in the sun before pressing, and the must is so concentrated that it barely ferments. Toro Albalá works from Aguilar de la Frontera and holds one of the deepest libraries of vintage-dated PX in Spain. The museum releases are the most profound and concentrated wines in that library: the Selección bottlings were vinified by the second generation and by Antonio Sánchez Romero, third generation and current head of the estate, while the rarer Convento Selección comes from the oldest and finest lots and the Ginés Liébana label covers older parcels bought in and raised at the bodega. Decades in cask leave the wine dark and viscous, with a savoury depth that sets it well apart from younger blended PX.

A small measure is plenty, and an opened bottle will keep for months if stored cool. Serve at 8–10°C with dark chocolate, coffee desserts or a wedge of blue cheese.
