Eléctrico Fino En Rama is Toro Albala's biologically aged fino from Montilla-Moriles, made entirely from Pedro Ximénez and bottled without fortification.

Montilla-Moriles lies inland in the province of Cordoba and follows the same solera logic as Jerez, with two important differences: the grape is Pedro Ximenez rather than Palomino, and the fruit ripens to such high sugar that the base wine reaches around 15% alcohol unaided, so no fortification is needed for the veil of flor to survive. This wine comes from the chalky albariza vineyards of the Moriles Alto district, generally held to be the finest zone in the appellation. It ages under flor for an average of about five years and is bottled en rama, with minimal fining and filtration, which leaves more of the yeasty, saline texture in the glass. The name and the light bulb on the label nod to the family's bodega at Aguilar de la Frontera, housed in a former power station.

Drink it fresh and treat an open bottle like white wine, finishing it within a few days. Serve well chilled at 8-10°C with olives, almonds, jamon or oysters.
