Toro Albalá Poley Palo Cortado En Rama 25 Años is a dry Montilla-Moriles Palo Cortado bottled unfiltered at an average of 25 years, in half-litre format.

Palo Cortado is the ambiguous style of the sherry family, a wine that starts under flor like a Fino, turns towards Amontillado as the veil dies, and then keeps going as oxidative ageing takes hold, ending up with the aromatics of one style and the body of another. In Montilla-Moriles it is made from Pedro Ximénez rather than Palomino, as every wine in the region is, dry ones included. Toro Albalá selects for it from the heavier, darker casks of Amontillado in its Aguilar de la Frontera cellars, and this bottling averages 25 years in wood. It is bottled en rama, without filtration, which preserves the fine savoury texture that is the point of the style, and the finish is dry despite the concentration.

Serve at 13-14°C in a small glass and finish within a month of opening. It calls for the best jamón you can find, or aged Manchego and almonds.
