Description
Trimbach Riesling Clos Ste Hune comes from a single walled parcel of little more than a hectare and a half and is widely held to be the benchmark dry Riesling of Alsace.
The clos lies inside the Rosacker grand cru at Hunawihr, on a shallow, stony topsoil over dolomitic limestone that drains freely and ripens slowly. Trimbach has owned the parcel for well over two centuries and bottles it separately every year the fruit merits it, historically without printing the grand cru name on the label. The vines are old and yields are very low. Winemaking is the same restrained formula used across the house: whole-bunch pressing, fermentation in stainless steel, no malolactic fermentation, no oak, and a long period on fine lees followed by several years of bottle age in the cellars before release. Residual sugar is 3.8 grams per litre.
Closed and almost severe on release yet capable of decades in bottle, it suits fine seafood and poultry in cream; serve at 12 degrees.
