Trimbach Sylvaner Weinbaum 2023

Trimbach Sylvaner Weinbaum is a bone dry Alsace Sylvaner from the long established house at Ribeauville.

Sylvaner was once the workhorse grape of Alsace and has been steadily replanted with more fashionable varieties, which makes a serious bottling from a house of Trimbach's standing worth attention. The variety gives a quieter, drier and more overtly mineral wine than Riesling, with lower aromatics and a stony finish, and it rewards older vines on limestone and clay. Trimbach have now converted all of their vineyards to organic farming. The wine is whole bunch pressed and fermented cool in stainless steel with no oak and no malolactic fermentation, in keeping with the house style, and finished at under 1 gram per litre of residual sugar, which is about as dry as Alsace gets.

Bone dry and understated, it is a natural match for oysters, charcuterie and asparagus; serve at 8 to 10 degrees.
