Description
Weisser Schiefer is Uwe Schiefer's dry Welschriesling, drawn from a single hectare of old vines on the schist and chalk hillsides of the Südburgenland.
The vines span the villages of Eisenberg and Kohfidisch, on south-east and south-west facing slopes of dolomite chalk, slate and quartz. They run from about forty to sixty years of age, which is unusual for a variety more often planted for volume. All the fruit was picked by hand and fermented spontaneously in 1,200-litre wooden barrels without temperature control, with at least one parcel taken in as whole bunches before pressing. The wine then spent eight months on lees in large Austrian and Slovenian tronconique casks and was bottled unfined and unfiltered, as all of Schiefer's wines are. At around 11% alcohol it stays light on its feet while carrying real texture and a savoury, earthy edge.
Ready now, with a further three to five years in hand. Serve at 10–12°C with river fish, schnitzel or a green salad with goat's cheese.
