Tartare di Salmone con Agrumi (Citrus Salmon Tartare)

Ingredients

  • 400g fresh salmon fillet, skin removed and finely diced
  • 1 grapefruit, segmented and roughly chopped
  • 1 orange, segmented and roughly chopped
  • 1 small red onion, finely diced
  • A small handful of fresh dill, chopped
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Sea salt and freshly ground black pepper, to taste
  • Optional: a few capers or diced avocado for garnish

Instructions

  1. Place the diced salmon in a mixing bowl. Gently add the grapefruit, orange segments, red onion, and chopped dill.
  2. Drizzle with extra virgin olive oil and lemon juice. Season with sea salt and freshly ground black pepper.
  3. Toss the mixture lightly to combine all the flavours, taking care not to mash the salmon.
  4. Cover the bowl with cling film and refrigerate for 10-15 minutes to allow the flavours to meld.
  5. To serve, spoon the tartare onto a chilled plate. Garnish with capers or diced avocado if desired, and accompany with toasted sourdough or crisp crackers.
