Valdesil Valderroa Carballo Mencía is the estate's top red, released only in years that suit red wine.

Valdeorras sits at the eastern edge of Galicia, where the Sil valley cuts through black slate and the vineyards climb in narrow terraces. Bodegas Valdesil is a Prada family estate whose reputation rests on old vines and steep, high sites. Carballo is drawn from a small group of ancient pezas — the local word for these fragmented plots — on the very steep, north-facing slopes of Carballeda de Valdeorras, among the highest vines in Galicia and rooted in pure black slate. It is one of Raúl Prada's more personal projects, and the winemaking is more involved than for the standard Valderroa Mencía: strict sorting, destemming, fermentation in concrete and sixteen months of maturation in neutral oak. The result is a Galician red built on freshness and length rather than weight, with a firm, mineral undertow from the slate.

Drinking well now and good for another five to eight years, it suits grilled sirloin, roast pork or mushroom dishes. Serve at 16–18°C.
