Description
Valdespino Pedro Ximénez Yellow Label is a sweet Pedro Ximénez sherry from Jerez, made in the sun dried style used in Andalucia for centuries.
Pedro Ximénez grapes are picked and then spread on mats in the open to raisin, which concentrates their sugar so heavily that fermentation stops almost as soon as it starts; the wine is fortified and passed into a solera, the fractional blending system in which casks are partly drawn and refilled from younger scales year after year, so that the finished wine carries something of every stage it has been through. Valdespino is one of the historic bodegas of Jerez, with a lineage traditionally traced to the fifteenth century, and has held to long cask ageing. Sherry of this kind is bottled when the bodega judges it ready rather than according to a vintage.
Serve at around 13°C in a small glass with chocolate desserts, blue cheese or dried fruit, or over ice cream; an opened bottle will keep for months.
