Insalata di Polpo e Patate (Sardinian Octopus & Potato Salad)
Ingredients:
- 1 octopus (approximately 1kg), cleaned
- 600g waxy potatoes, peeled and diced
- 4 tbsp extra virgin olive oil
- 1 lemon, juiced and zested
- 2 celery stalks, finely sliced
- Small handful fresh flat-leaf parsley, chopped
- Salt and cracked black pepper
Instructions:
- Place the octopus in a large saucepan of unsalted water and bring to a gentle simmer. Cook for 45–60 minutes, or until tender when pierced with a fork.
- Remove the octopus from the water, allow to cool slightly, then cut into bite-sized pieces.
- Meanwhile, boil the potatoes in salted water until just tender, approximately 10–15 minutes, then drain well.
- Whisk together the olive oil, lemon juice, salt and cracked black pepper in a large bowl.
- Add the octopus, warm potatoes and sliced celery, tossing gently until everything is coated in the dressing.
- Finish with the lemon zest and fresh parsley, adjusting the seasoning to taste.
- Allow the salad to rest for 10 minutes before serving at room temperature.
A favourite along Sardinia's Mediterranean coastline, Insalata di Polpo e Patate is a natural match for Vermentino. The wine's bright citrus acidity complements the tender octopus and lemon dressing, while its delicate saline character enhances the seafood and balances the richness of the potatoes and olive oil.
