Verget's Grand Élevage is a regional Bourgogne blanc vinified entirely in oak, which is what the name refers to.
Verget is the négociant house founded by Jean-Marie Guffens at Sologny in the Mâconnais, buying fruit and juice from growers across Burgundy and bottling under a range of cuvée names. This wine is drawn mainly from the village of Péronne, between Viré and Azé in the northern Mâconnais, with a complement from Mâcon-Pierreclos. Unlike most Bourgogne blanc at this level, which is made in tank, the whole of it is fermented and raised in barrel, with 15% new wood, and spends eight months on its lees. The approach adds flesh and a phenolic grip that regional Chardonnay rarely shows, without losing the freshness the Mâconnais delivers. It is a straightforward argument for buying on producer rather than on appellation.
Drink over the next three or four years with roast chicken, grilled fish or a creamy cheese; serve at 10–12°C.
