Description
Verget Chablis Cuvee De La Butte is a village Chablis drawn from a parcel sitting beside the Premier Cru Les Butteaux.
Chablis lies well north of the rest of Burgundy, and its Kimmeridgian limestone and cool climate give Chardonnay a leaner, more mineral shape than anywhere else in France. Maison Verget was founded by Jean-Marie Guffens as a négociant business buying fruit rather than wine, with unusually strict selection at harvest. This bottling comes from vines close to the Premier Cru Les Butteaux, which is where the slightly cheeky name comes from, since it translates roughly as wine of the hill. The parcel sits on a sudden slope with very chalky soil rich in white clay. As with all the Verget Chablis wines, only the free-run juice was used, fermented 95 per cent in the house's bespoke horizontal stainless-steel tanks and five per cent in barrel, then bottled after seven months on lees.
Drinking now and good for another three to five years. Serve at 10-12°C with oysters, grilled flathead or a plain omelette.
