Verget Chablis Envers et Contre Tout 2019

Verget Chablis Envers et Contre Tout is drawn from parcels on the cooler, north-facing slopes of three Chablis premiers crus but bottled at village level.

The parcels behind this wine lie on the north-facing flanks of Côte de Léchet, Vaillons and Montmains, an orientation that counted for a good deal in a warm, solar season. Verget is Jean-Marie Guffens’ négociant house, buying fruit and juice rather than farming vineyards, and applying a Côte d’Or approach to Chablis. Harvest took place in mid-September at optimal ripeness. Guffens fermented the wine in his bespoke horizontal stainless-steel tanks, which give the same lees-to-wine ratio as a barrel while allowing the lees to be worked gently with nitrogen rather than exposed to oxygen. It then aged a further 18 months on lees in concrete tank, the aim being to keep the acidity cutting through the density of the fruit. The name translates as ‘against all odds’, though Guffens has never explained quite what he meant by it.

Drinking now and holding three to five years. Serve at 10-12°C with oysters, grilled whiting or a fresh goat’s cheese.
