Verget Chablis Grand Cru Vaudésir 2009

Verget Chablis Grand Cru Vaudésir is a museum release from Jean-Marie Guffens' négociant house, with a tenth of the blend drawn from the La Moutonne monopole.

Vaudésir is one of the seven grand crus that share the single right-bank hill above Chablis, on Kimmeridgian marl. Verget was founded by the Belgian-born Guffens in the Mâconnais in 1990, buying fruit from growers across Burgundy and vinifying it at Sologny with an unusually exacting eye on picking dates. The greater part of this cuvée comes from a north-facing plot on very stony, marly and shallow soil, with a further 10 per cent harvested in the lieu-dit of La Moutonne. A monopole of Long-Depaquit, La Moutonne sits in a natural amphitheatre almost entirely within Vaudésir, with a small protrusion into Les Preuses; its southerly aspect and steep gradient give it a warmer microclimate than Vaudésir proper. The wine was fermented in barrel and aged seven months in oak, then a further six months on fine lees in Verget's horizontal stainless steel tanks.

Released with considerable bottle age and drinking now, with no rush. Serve at 10-12°C with turbot, roast chicken or a mature comté.
