Weinbach Alsace Sylvaner is a dry old-vine bottling of a variety that most of Alsace has quietly abandoned.
Sylvaner was once planted widely across Alsace and has slipped down the pecking order over the decades, largely because it was farmed for volume rather than quality. Domaine Weinbach, based at the Clos des Capucins beneath the Schlossberg hill at Kaysersberg, draws this wine from old vines within the walled clos itself, on the deeper alluvial soils at the foot of the slope. The estate is farmed biodynamically, and low yields from mature vines do much of the work here. The fruit is gently pressed as whole clusters in pneumatic presses, then fermented with indigenous yeasts in old oak vats, an approach the family regards as part of the terroir and one that adds depth without adding oak flavour. The wine is finished dry.
Ready now and good for three to five years. Serve at 10-12°C with charcuterie, onion tart or grilled prawns.
