Weinbach Alsace Théo Riesling 2021

Weinbach Alsace Théo Riesling comes entirely from the monopole Clos des Capucins at the foot of the Schlossberg.

Domaine Weinbach farms biodynamically at Kaysersberg, where the walled Clos des Capucins takes its name from the Capuchin friars who arrived in 1619 and still surrounds the house and cellar. The clos sits at the base of the Schlossberg hill and is sheltered from the wind by the surrounding slopes and by its own walls. Its soils are sand, alluvial pebbles and granitic gravel, lighter ground than the granite of the grand cru above, and the low-cropping vines here give a Riesling that is supple and accessible young rather than austere. As with all the domaine's dry Rieslings, the fruit was whole-bunch pressed and fermented without added yeast, then matured for ten months in very old oak casks, which shape the texture without adding flavour.

Excellent on release and capable of ten years or more. Serve at 10-12°C with steamed fish, choucroute or a Vietnamese-style salad.
