Albino Rocca Barbaresco Ronchi Riserva is fermented under a submerged cap from the oldest and most powerful fruit in the family's Ronchi holding.
Each year the Rocca family sets aside a small selection from the Ronchi cru, taken from its oldest vines, for the Riserva. Where the standard Ronchi is handled conventionally, the Riserva ferments with the cap held beneath the surface of the must, a technique that draws more colour and tannin from the skins. The wine then spends two years in large oak casks and a further two years in bottle before release, in keeping with the Barbaresco Riserva rules. In the past this label carried a more modernist stamp that included partial ageing in barrique; today fermentation takes place in upright oak tini and maturation in large Austrian and Slavonian oak ovals. It remains the darkest and most structured wine in the cellar, but the move away from small wood has made it a purer and better balanced expression of the site.
This asks for time, or a long decant; serve at 16–18°C with dry-aged beef, hare ragù or well-matured hard cheese.
