Description
A Dos Tiempos is an equal-parts blend of Tempranillo and Garnacha drawn from two separate corners of the Duero valley.
The Garnacha comes from Cigales in Valladolid and the Tempranillo from Nava de Roa in Burgos, two districts with different soils and ripening patterns, which is what the name—roughly, in two stages—refers to. Alfredo Maestro picked both by hand in the second week of September and destemmed the bunches before a spontaneous fermentation in stainless steel with daily pump-overs. The grapes spent 25 days on skins, a long maceration by the standards of his fresher cuvées, then the wine was racked to tank where malolactic fermentation ran over 20 to 30 days. It went into French oak for six months and settled there without further racking until bottling the following May. No corrections or additions were made at any point, so the wine is unfined, unfiltered and low in sulphur.
Drinking well now and for around five years. Serve at 16–18°C with roast lamb, grilled sausages or a lentil stew.
