Almaviva 2016

Almaviva is Chile's benchmark Cabernet blend, made in Puente Alto in the Maipo Valley by a partnership between two of the wine world's great houses.

The estate was founded in the late 1990s, when Baron Philippe de Rothschild, the family company behind Château Mouton Rothschild, joined forces with Concha y Toro to bring Bordeaux blending traditions to one of Chile's finest Cabernet sites. The vineyard lies on the alluvial terraces of the Maipo River at the foot of the Andes, where stony, free-draining soils and cool mountain air at night keep the fruit fresh through a long ripening season. Cabernet Sauvignon leads, with Carmenère, Cabernet Franc and Petit Verdot adding spice, perfume and depth, and the wine is matured in French oak. The name comes from Count Almaviva of Beaumarchais' The Marriage of Figaro, and the label carries a design drawn from the Mapuche kultrún drum. The 2016 is a graceful, silky vintage with a round, fresh mouthfeel and subtle tannins.

Serve at around 16 to 18 degrees, ideally after an hour or so in a decanter. Slow-roasted lamb shoulder, beef rib or an aged cheddar will match the wine's structure, and it will keep developing in a good cellar for many years.
