Animale Chardonnay 2025

Animale Chardonnay is a Yarra Valley white raised in old French oak.

Yarra Station, in the Yarra Glen subregion, grows this fruit on ironstone-rich grey clay loam over a south-west facing slope, which keeps the worst of the afternoon sun off the bunches. A solid flowering, a warm spring and a dry December left yields in balance. Picking was done early to hold freshness and acidity, backed up by a good deal of canopy work through the season. Whole bunches were pressed gently the morning after harvest, giving slightly cloudy juice; after a night settling in tank it was racked to old French barrels and hogsheads, the heavy lees left behind.

White peach, grapefruit and a faint flinty edge, with fine texture and a dry, citrus-driven close. Serve at 11-12 degrees. It works with grilled flathead, chicken with tarragon, or a wedge of soft cheese and good bread.
