Animus Distillery Barrel Aged Gin 500ml 2021

Animus Distillery Barrel Aged Gin 500ml is a barrel-matured gin bottled overproof at 55.9 per cent.

The base is a variation on the house Macedon Dry, pushed towards lemon and Christmas spice to give the wood something to work with. Twenty months followed, most of it in Cloud9 Pinot Noir casks with a finish in new French oak. That is long by the standards of barrel-aged gin, and long enough for the wine and oak influence to read clearly without burying the botanicals. The distillery sits at Kyneton in the Macedon Ranges, which is good company for barrels: this is cool-climate wine country and the casks come from up the road. Bottled overproof, with no adjustment.

Oily and very long, with lemon oil, baking spice and a soft wine-cask sweetness over the juniper. At this strength it takes water well. Drink it neat, or over ice with lemon zest, or mix hard. An Old Fashioned built on gin is the obvious experiment.
