Animus Distillery Barrel Aged Gin 500ml 2022

Animus Distillery Barrel Aged Gin 500ml is a gin matured in Moscato Giallo barriques and bottled at 55.1 per cent.

Oak choice made this release. Three freshly disgorged Moscato Giallo barriques from Musk Lane Winery, a few minutes down the road, took a citrus-led variation on the house Macedon Dry, and the white-wine seasoning supported the gin instead of swamping it. Despite the colour in the bottle, maturation ran only twelve months before the spirit was judged ready for blending, dilution and hand bottling. No sugar or colour was added at any point. The barrel program at Kyneton has been running for years, and this is the release where the cask selection clicked.

Straight up, layers of apricot, marmalade, cocoa butter and coconut give way to pear, pineapple and burnt sugar, with heat and spice around a firm structure. Add water or ice and chocolate-orange, herbs and vanilla come forward. Bartenders will find plenty to work with.
