Animus Distillery Barrel Aged Gin 700ml

Animus Distillery Barrel Aged Gin 700ml is a cask-matured gin from the Macedon Ranges.

Barrel-aged gin is a small category and an easy one to get wrong, since too much wood and the botanicals disappear. The Kyneton distillery has been working at it for years, starting from a variation on its Macedon Dry recipe and using wine casks sourced locally, the Macedon Ranges being cool-climate wine country where empty barriques are not hard to come by. Each release differs according to the wood available, and they are bottled by hand at high strength with no sugar or colouring.

Juniper and citrus softened by vanilla, dried fruit and a gentle wine-cask sweetness, with a long oily finish. Drink it neat or over a single large cube with lemon zest. It also stands in convincingly for whisky in an Old Fashioned.
