Animus Distillery Bauble Davidsonia Gin 50ml is a 50ml bauble of the distillery's Australian answer to sloe gin.

Sloe gin usually starts with Prunus spinosa. This starts with Davidsonia pruriens, the Davidson's plum, a sour tropical fruit from temperate Queensland. The plums are snap-frozen so the ice ruptures the cell walls and the spirit gets at the juice quickly, then steeped for months in an overproof version of the Macedon Dry recipe. Pressing happens down the road at the Musk Lane winery. Because the fruit changes year to year, so does the gin, and this release is the most delicate so far. The bauble format is a sealed glass ornament holding a single 50ml pour.

Ripe plum, lemon and rosehip on the nose, then morello cherry, guava and a zingy palate, with gentle tannin and lime-like acidity holding the sweetness in check. Chill it and drink it neat, or lengthen it with soda and a wedge of blood orange.
