Animus Distillery Davidsonia Gin 500ml 2021

Animus Distillery Davidsonia Gin 500ml is the standard bottling of this Australian plum gin.

Pressing is the unusual step. After months steeping in an overproof version of the house Macedon Dry, the snap-frozen Davidson's plums are taken down the road to the Musk Lane winery and pressed on wine equipment, which pulls out a depth of colour, tannin and extract that a simple rack-off would leave behind. Everything about this bottling is seasonal: the Queensland fruit varies from one year to the next, the volumes are small, and this is the most delicate release to date. Treat it as you would a fresh, fruit-driven wine and drink it within weeks of opening, or keep it cold.

Aromatic and plummy, with lemon and rosehip above, morello cherry and guava below, and a finish of fine tannin and lime-edged acidity. Cold and neat is lovely. A dash of soda and a wedge of blood orange turns it into a spritz.
