Animus Distillery Davidsonia Gin 700ml

Animus Distillery Davidsonia Gin 700ml is a limited-release fruit gin built on Australian Davidson's plum.

Three years of development went into getting this right, and the recipe turns on patience: an eighteen-month steep of Davidson's plums in an overproof variant of the Macedon Dry base, so the fruit gives up everything it has. Davidson's plum is an Australian rainforest fruit, sour and astringent in a way that makes it a genuine substitute for English sloes and not a gimmick. When the distillery put its own allocation online it went in under two hours, which tells you what the local audience made of it. This is the 700ml bottling of that third release.

Sour plum, raspberry and feijoa sit over the juniper, citrus and spice of the Macedon Dry base, finishing dry and tannic. Neat is the purest way in. Otherwise a dash of soda and a squeeze of lime, or use it as the fruit element in a gin sour.
