Animus Distillery Macedon Dry Gin 500ml is the house bottling of this juniper-led Macedon Ranges gin.

Two Australian natives make the difference. Lemon myrtle sharpens the citrus and mountain pepperberry adds a piquant heat, both sitting on a rich, juniper-driven base originally written as a tribute to the best London Drys. Around them: cinnamon, cardamom, angelica root, clove, coriander seed, sarsaparilla root, star anise, lemon, lime, turmeric and rosemary. The garden at the Kyneton distillery supplies a good deal of the fresh material, cut on distillation day, and the brightness that gives is obvious next to gins built on dried botanicals alone. Five hundred millilitres is the standard format across the range.

Dry, deep and smooth, with pine, sappy freshness and a warm spice finish. Build a gin and tonic with plenty of ice, good tonic and lemon, or go straight to a Martini, stirred, very cold, with a twist. It handles a Negroni without disappearing.
