Description
Antinori Cervaro della Sala IGT is one of Italy's most admired white wines, a barrel-fermented Chardonnay with a small share of Grechetto, offered here in a 375ml half bottle.
The home of this wine is Castello della Sala, a 14th-century fortress near Orvieto in Umbria that the Antinori family bought in 1940. Its vineyards sit between 220 and 470 metres above sea level on clay and limestone soils rich in fossil shells. The wine was first made in 1985 by Renzo Cotarella and takes its name from the Monaldeschi della Cervara family, who owned the castle in the 14th century. The Chardonnay has a few hours of cold skin contact, then ferments in barriques, where part of it goes through malolactic fermentation. The Grechetto is fermented separately without oak and blended in later, and the finished wine rests in bottle for several months before release.
Half bottles are handy for dinner for two, or as a first taste of a wine that normally asks for patience. Serve lightly chilled, at around 10 to 12 degrees, as serving it too cold mutes the texture. It suits lobster, roast chicken, veal, mushroom risotto and richer fish dishes. Smaller formats tend to mature a little faster than full bottles, so this is a good one to enjoy over the next several years.
