Description
Antinori Muffato della Sala is a sweet wine from Castello della Sala in Umbria, made from grapes shrivelled by noble rot.
Autumn mists gather in the valleys around Orvieto and encourage Botrytis cinerea, the fungus that punctures the skin of a ripe grape, draws off its water and concentrates everything left behind. A field of varieties is used here, among them Sauvignon Blanc, Sémillon, Traminer, Riesling and Grechetto, picked in successive passes through the vineyard as the rot takes hold bunch by bunch rather than all at once. Fermentation and ageing take place in small oak barrels. Wines of this kind are laborious to make and yields are a fraction of those for a dry white, which is why they are almost always bottled in small format.
Serve well chilled at around 10°C with blue cheese, foie gras or fruit tarts; an opened bottle keeps in the fridge for several days.
